Banana chocolate hazelnut cake
2 or 3 ripe bananas, mashed (approximately 1 cup mashed bananas, the ripest the best)
60 ml vegetable oil
60 ml honey
2 teaspoons vanilla extract
50 g brown sugar
180 g all-purpose flour
1 1/2 teaspoon baking soda
Pinch of sea salt
100 g dark chocolate, roughly chopped
75 g hazelnuts, roughly chopped
- Preheat the oven to 180ºC. Grease and flour a bread pan.
- In a large mixing bowl, stir together the mashed bananas, oil, honey, eggs, vanilla extract, and sugar until well combined.
- Add the flour, baking soda, and salt, and mix until just combined. Fold in the chocolate.
- Pour the batter into the prepared pan and sprinkle with the chopped hazelnuts. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Remove and let it cool for at least 10 minutes before removing from the pan.
