Banana chocolate hazelnut cake

2 or 3 ripe bananas, mashed (approximately 1 cup mashed bananas, the ripest the best)
60 ml vegetable oil
60 ml honey
2 eggs
2 teaspoons vanilla extract
50 g brown sugar
180 g all-purpose flour
1 1/2 teaspoon baking soda
Pinch of sea salt
100 g dark chocolate, roughly chopped
75 g hazelnuts, roughly chopped

  1. Preheat the oven to 180ºC. Grease and flour a bread pan.
  2. In a large mixing bowl, stir together the mashed bananas, oil, honey, eggs, vanilla extract, and sugar until well combined.
  3. Add the flour, baking soda, and salt, and mix until just combined. Fold in the chocolate.
  4. Pour the batter into the prepared pan and sprinkle with the chopped hazelnuts. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Remove and let it cool for at least 10 minutes before removing from the pan.
