Yogurt and berries popsicles
Makes 8 to 10 ice creams
500 g unsweetened natural Greek yogurt
75 g sugar
1/2 teaspoon vanilla extract
300 g assorted berries (blackberries, raspberries, blueberries, strawberries, currants; if using frozen fruit, thaw first)
Juice and zest of half a lemon
- In a bowl, add the yogurt, half the sugar and the vanilla extract and stir well.
- In the food processor bowl, add the berries, the remaining sugar, the juice and the lemon zest. Mix until very homogeneous.
- Distribute the two mixtures by the popsicle molds and insert the sticks. Place the yogurt and berries popsicles in the freezer for 10 hours before unmolding and serving.
